Lucy Parker - Vegan Food
20 MINUTE Coconut Curry 🔥🌱 This is easily a 20 MINUTE Coconut Curry 🔥🌱

This is easily adaptable to fit what’s in your fridge… cauldron tandoori bites, falafels, meatballs, you name it! It works.

Ingredients:

 2 x packs of Cauldron Tandoori Bites
150g mangetout
1 red pepper, cut into large bite-sized pieces
150g spinach leaves (fresh or frozen)
For the curry:
400ml tin full fat coconut milk
400g passata (sub for 400g tin of chopped tomatoes)
4 cloves garlic, minced
Thumb-sized piece of ginger, minced
1 red onion, finely diced
1 tsp mustard seeds
1 tbsp cumin powder
1 tsp turmeric powder
2 dried birds eye chillies (optional)
1/2 tsp cinnamon
generous pinch salt & pepper to season
400g basmati rice (if serving for four)
To garnish:
A sprinkling of coriander
Method

Start by adding a glug of olive oil or coconut oil to a pan and add the chopped ginger and onion, fry for around 4 minutes
If cooking with rice, bring the pot of basmati to boil (you want the water only the pad of your finger above the level of the rice)

Add in the minced garlic and fry for around a minute or two before adding the chopped pepper, mustard seeds and birdseye chillies
After a minute or two, add the coconut milk, passata (or tinned tomatoes), along with all of the dried spices and leave to slowly simmer for around 10 minutes

For the last 2-3 minutes of cooking time, add the mangetout, spinach and Cauldron Tandoori Bites, pop a lid on and leave
Serve up with the fluffy basmati rice & enjoy with freshly chopped coriander

You will need:

100 g dried pasta
2 tbsp plant based butter
1 red onion finely diced
5 garlic cloves finely chopped
2 tbsp chopped sun dried tomatoes
1 roasted red pepper finely chopped (I use the ones that you get in jars)
2 tbsp tomato puree plus a splash of boiling water
1 stock cube + 1l boiled water
80 g kale roughly massaged and torn
1 tsp each dried sage basil and parsley

2 tbsp tamari or soy sauce
800 ml vegetable stock made with boiling water and stock cube
3 cloves garlic minced / finely chopped
1 thumb sized piece fresh ginger grated / minced
1 large red chilli substitute for 1 tsp chilli flakes
1 tbsp brown sugar
100 g noodles rice, ribbon or even udon will work
5 tenderstem
6 gyozas I used yukata vegan gyozas
1 tsp sesame seeds

Another delicious recipe working with British Leeks. This time a vegan twist on a classic. 

Ingredients ✏
2 large slices bread 
1 tbsp vegan butter
100g grated cheese (cheddar, I used vegan)
110ml oat milk
3/4 tsp Worcestershire sauce
1 tsp English mustard (sub for 1/2 tsp dijon mustard)
1/2 small leek, diced
Pinch salt
 
Method👩‍🍳

Start by preheating the grill to 200ºC

Place two slices of bread under the grill to lightly toast on both sides

In the meantime melt the butter, grated cheese, Worcestershire sauce, mustard and oat milk together in a non stick pan, slice the leeks and add those to the pan

Once the bread has toasted on each side scoop the cheesy leek topping to the toast then pop back under the grill for a few more minutes until the cheese starts to bubble and slightly brown

Enjoy with a pinch of salt and your favourite fresh herb, chives or parsley work brilliantly

Vegan Cheese & Leek Filled 🔥

These are fantastic for this Shrove Tuesday if you're looking for a savoury option. 🌱

[Ad / Partnership Role with @britishleeks ]

Ingredients ✏
190g plain flour
1 tsp baking powder
Generous pinch salt
230ml oat milk
2 tsp lemon juice
1 small leek, finely sliced
70g cheese, grated, vegan or non vegan
Fresh chives or parsley to top

Method:👩‍🍳
Prepare the leeks by slicing and grating the cheese (vegan or regular)

Add the butter to a non stick pan, place on a medium - high heat then add the sliced leeks and fry for a few minutes then place into a bowl

In a large bowl mix the flour, salt and baking powder together, in a separate bowl add the lemon juice and oat milk together and leave to curdle for around 2 minutes before adding to the large bowl of flour, whisk until smooth

Once mixed together, check the texture, you want it to be a thick batter but runny enough to fall off the spoon

Pop the same pan back on a medium - high heat with another knob of vegan butter then spoon on 3-4 ladles of pancake batter, add a spoonful of the fried leeks in the middle of each pancake, followed by a sprinkle of grated cheese then top with another spoonful of pancake batter

Once the pancakes start to bubble, flip and fry on the other side for a further 3-4 minutes

Serve hot with more cheese and leeks on top with a sprinkle of fresh chives or parsley

This is comfort food at its best, fluffy buttery bread (vegan friendly).

RECIPE👩🏼‍🍳
For the dough:
400 g cups plain flour around 2 cups
7 g Fast action yeast 1 sachet
1 tbsp caster sugar to feed the yeast
1 tsp salt
210 ml room temperature oat milk ¾ cup
60 ml olive oil 2 tbsp

For the filling:
100 g vegan margarine ¼ cp
1 medium leek around 150-200g
1 tsp garlic powder
1 tsp dried parsley
1/4 tsp salt

200 g red lentils
600 ml boiling water
1 vegetable stock cube
400 ml tinned coconut milk
1 tsp sea salt

Spices
1 tbsp cumin
1 tsp paprika
1 1/2 tsp turmeric

HIT SAVE to come back to this beauty time and time again. 

INGREDIENTS ✏️:

3 shallots, 1 chilli, thumb sized piece of ginger finely chopped

1 pepper and head of broccoli

1 tsp tamari, 1 tsp smoked paprika, 1/2 tsp cumin and turmeric

400ml tinned coconut milk (full fat)

200ml boiling water

1 pack of CauliShoots mixed with 1/2 tsp turmeric, smoked paprika and cumin

Garnish with 🌱 :
chopped coriander and chilli crisp oil
100ml sesame oil
1 tsp chilli flakes
1 tsp garlic powder
2 tbsp chopped chives
1 tsp chopped ginger

Noodles: I used Dried Udon Noodles. Swap for ramen noodles❤️

It takes 20 minutes or so to simmer together

Ingredients: ✏️ 

1 tbsp olive oil
1 red onion
3 large cloves garlic
1 carrot diced
1 leek green ends included, diced
1 tsp dried thyme
120 g orzo pasta
1.5 l vegetable stock stock cube and boiling water

3-4 sprigs fresh dill
Salt & pepper to taste
1/2 lemon squeezed
Extra virgin olive oil to garnish

INSTRUCTIONS 👩🏼‍🍳 
 
Start by finely chopping the garlic and onion, dice the carrot and leek and add to a large pot with a drizzle of olive oil, salt and pepper and sweat down for around 6 minutes

Boil the kettle and add the water to a bowl with the stock cube and whisk until dissolved

Add the orzo to the pot along with the stock, dried thyme and leave to bubble away for around 12 minutes

Add a little more seasoning of salt and pepper, the squeeze of lemon and fresh dill and taste test

Once cooked serve up with a drizzle of extra virgin olive oil on each bowl with a sprig of fresh dill

For this recipe you will need: 📝

1 courgette finely diced
1 large leek green ends too diced
1 small red onion finely diced
1 red pepper finely diced
2 large cloves garlic minced

Frittata:
1 block of tofu 280-340g
2 tbsp olive oil
1/2 tsp Dijon mustard
2 tbsp nutritional yeast optional
Salt and pepper to taste
1/2 tsp Smoked paprika garlic powder & turmeric
160 ml oat milk

Serve with:
1 tbsp harissa paste per serving
1/2 avocado sliced
Fresh herbs such as dill or parsley

INGREDIENTS:
1 tbsp olive oil
250 g vine tomatoes with a pinch of salt
400 g tinned chopped tomatoes

1 tsp olive oil
1 red onion finely chopped
3 cloves garlic or 1 tsp garlic powder
1/2 tsp dried sage
1/2 tsp dried oregano
1/2 tsp Marjoram swap for thyme
1 tbsp chilli oil (I used Pippy Eats, swap for 1 tbsp harissa)
1 tbsp chopped fresh basil
250 g gnocchi
5-6 tenderstem

450g gnocchi 
½ tsp dijon mustard
1 tsp garlic powder
1 tbsp plain flour 
1 helped tbsp butter (vegan)
A pinch of parmesan (vegan)

For roasting
½ butternut squash, diced
1 leek, diced
3 fresh sage leaves, roughly chopped
1 tbsp olive oil
Salt & pepper to season
2 tbsp sunflower seeds 
1 tsp fried parsley

Method

Preheat the oven to 200°C.

Chop the butternut and leek into 3cm thick pieces, add to a roasting tray with the olive oil, chopped sage leaves, salt and pepper. Toss together then roast for 35 minutes.

Prep the gnocchi by adding to a pot of boiling salted water and boil for 3 minutes or until the gnocchi floats to the surface.

Drain off the gnocchi leaving a ladleful of water in the pot (around 250ml) and put the cooked gnocchi in a bowl to the side.

Add the butter, dijon mustard, garlic powder and flour to the pot of gnocchi water and whisk together until smooth. Then add the gnocchi back in and stir in the sauce.

Once the leek and butternut is baked add the pot of gnocchi and sauce to the baking dish, stir together. Generously season with salt and pepper. Sprinkle over the sunflower seeds and dried parsley then return to the oven for around 10 minutes to finish baking.

Stir just before serving and garnish with more cracked black pepper.  If you like, add a sprinkling of parmesan (dairy or vegan) to each bowl, to finish.

If you’re all about the christmas food (whether it’s Christmas Day or not) you’ve got to try this!

Coat the chopped baby potatoes (controversial choice of potato) in lots of olive oil, fresh rosemary & thyme, sea salt and smoked paprika

Add to the oven at 200°c fan, for around 15 minutes before adding the vegan pigs in blanket. You can either make these using vegan sausages and bacon rashers, OR buy them premade like me (from Aldi)

Toss after a further 20 minutes of cooking and take out once golden and crisp

Enjoy with lots of gravy 😍

It's a great what of sharing a bit of love with friends and family and REALLY easy to throw together (we need less time in the kitchen more time around the dinner table this year) and to make it even better, it only costs £7.25 to make!

This recipe is fab as you can amend it to suit what’s in your fridge.
___
SWAP sausages for:🔄
-stuffing
-mashed vegetable burgers
-bubble and squeak

All you need: 📝

1 sheet of puff pastry
180g of veggie sausages
Favourite festive chutney
Either tamari or melted vegan butter and smoked paprika**see notes

Preheat the oven to 200°c fan

Roll out the puff pastry sheet then spoon on the chutney until lightly covered

Mash up the leftover bubble and squeak or veggie sausages and add to the sheet of pastry (you want to think of it as three layers, the pastry, the chutney and the sausages)

Roll up the pastry so you have one huge long sausage shape then with a sharp knife divide into two, then repeat until you have around 12-16 pinwheels

Brush each pinwheel in either tamari OR melt down a few tbsp vegan butter and add 1 tsp smoked paprika and coat generously

Pop in the oven for around 23-25 minutes or until the pastry is golden

Enjoy!

1 red pepper 3cm chunks
1 tbsp tomato purée with splash water
300 ml passata

1 heaped tbsp harissa paste

1 tsp salt

1 tsp sage
