This is a corker of a recipe and easy to chop and change depending on what you have in the fridge

INGREDIENTS:
2 sliced ciabatta or ready made garlic bread
1 tbsp vegan butter
1 clove garlic
3 sundried tomato slices
Handful fresh basil
Pinch of dried rosemary and sage

1 Camemvert from La Fauxmagerie
Stuffed with 4 cloves garlic and topped with a drizzle of olive oil

A creamy pasta sauce made using Firm Tofu, roasted tomatoes & a bit of nooch👩🏼‍🍳👌🏻

INGREDIENTS: 📝
1/2 pack of Cauldron Organic Tofu
350g tomatoes
1 red pepper (optional)
1 tbsp harissa paste or harissa dried spice mix
1 tbsp olive oil 
2 tbsp nutritional yeast
Good pinch of salt and pepper

2 portions of pasta, we’ve gone for conchigle)

2 ladles of pasta water (around 250ml)

25g fresh basil to top

METHOD:👩🏼‍🍳
Start by preheating the oven to 200°C (fan)
Add all of the tomatoes & chopped pepper to a baking dish with the olive oil, harissa, salt & pepper, toss together and bake for around 25 minutes

Get a pot of water onto boil, add salt, when bubbling add the pasta, cook for around 10 mins

To a blender add 1/2 block of @cauldronfoods tofu, nutritional yeast and 2 ladles of pasta water

Once the tomatoes and pepper are cooked add to the blender and blitz until smooth

Drain the pasta then add the sauce, mix together topping with chopped fresh basil, a good pinch of black pepper and serve

AD I’m teaming up with @cauldronfoods to make the ultimate snacking platter with flavours that pack a punch🔥

Ingredients 📝

1 pack of Cauldron's Korean Bites
2 corn on the cob (raw or partially cooked) + 1 tbsp gochujang paste
1/2 cucumber, sliced

1 pot of hummus topped with 1 tbsp sriracha, 1 tsp sesame oil, black pepper & fresh parsley

1 block of Cauldron's Quick & Tasty tofu grilled with:
1/2 red chilli, 1 tbsp seasame oil, 1 tbsp chopped fresh parsley

2 tbsp vegan mayo mixed with 1 tbsp sriracha & 1/2 tsp garlic powder

METHOD:👩🏼‍🍳
Preheat the oven to 200ºC 
Slice and coat the corn ribs in the gochujang marinade, pop in the oven for 30 minutes

Slice the Quick and Tasty tofu into triangles, add to a bowl with chopped chilli, chopped parsley and the sesame oil then grill on a high heat on each side for around 5 minutes

Prep the hummus by mixing the sriracha, sesame oil and parsley together with a splash of water, then drizzle over the pot of hummus, garnish with cracked black pepper

Mix the mayo, garlic powder and sriracha together and set aside

Open a pack of Cauldron's Korean Bites & dip away! Serve as soon as the corn ribs are ready

WHAT YOU WILL NEED FOR 2:
Pack of Aldi’s fish less fillets (frozen aisle)
4 mini wraps 

2 carrots
1 spring onion
1 red chilli

Vegan mayo
fresh dill
gherkin juice(from the jar)
1 lime 
Fresh parsley 
___

Slice up that delicious veg, toss in the lime juice 

Make the mayo mix by stirring the ingredients together

Add the piping hot fish-less fillets, layer up that sauce & enjoy

PLANT BASED and delicious. Here’s the recipe👇🏻👇🏻

For the sauce 🌱:
2 roasted red peppers
Handful of cashews
25g fresh basil or parsley
1 tbsp olive oil
1 heaped tbsp nutritional yeast 
1 tbsp smoked paprika 
Large pinch salt & pepper

2 portions spaghetti (boil in heavily salted water)

Top with butter and herb mushrooms:
4 mushrooms (good size to stuff the centre)
2 tbsp plant based butter mixed with 1 tbsp freshly chopped parsley, 1 clove garlic, minced, handful of vegan cheese (optional) salt and pepper

METHOD👩🏼‍🍳👩🏼‍🍳👩🏼‍🍳

Mix the butter ingredients together then stuff inside the mushrooms & bake at 200°C tan for around 20 minutes or until bubbling inside 

Get the spaghetti into boiling salted water and cook until Aldente

Mix all of the sauce ingredients together in a blender, taste test, adding a little more seasoning if needed

Drain off most of the pasta (SAVE A LADLE FULL OF PASTA WATER)

Mix with the sauce over a low heat, season generously then add the roasted mushrooms on top and enjoy

This recipe is for those nights where the thought of chopping or prepping is an absolute NO GO.🙅🏼‍♀️

2 portions of pasta (rigatoni) 
Full tub of red pepper hummus (or half if you’re just cooking for you)
1/2 tsp garlic powder
Salt & pepper
1 tsp dried basil
150ml pasta water
Handful roasted pepper strips
5 tenderstem, roughly chopped
Handful fresh spinach

Garnish with fresh basil

Method:
Pop the pasta onto boil in salted water

Get your tub of hummus, add the garlic powder, basil, salt and pepper and pasta water

Add the tenderstem to the pot of pasta for the last 4 minutes of cooking

Drain the pasta water h tubes add the hummus mix , stir together

Add the roasted peppers and a handful freshly chopped basil

Season with more salt and pepper and enjoy🔥🔥

Vegan Fish Finger Crunchy Salad Sub💚🔥🔥

🌱INGREDIENTS:
Aldi fish-less fillets (at this point it’s an addiction, sorry guys)
1 sub roll
Sriracha

🫙For the sauce:
2 tbsp vegan mayo
1/2 squeezed lime
1/2 tsp garlic powder
1 tsp dried oregano
Pinch salt & pepper
1 tbsp pickle juice (I just use the juice from my gherkin jar)

1 little gem lettuce
1/2 red chilli
1 purple spring onion (swap for 1/4 red onion)
1 small cucumber
1/2 red pepper

Whack those fish less fillets in the oven at 200°C fan for about 25 mins 

Prep the salad and load up that sub!!

SWAPS: ♻️
You can easily swap the fillets for vegan chicken, or why not use grilled marinated tofu?

Personally I think it needs a bit of crunch, so use something that’s got exactly that🔥

25g basil

2 tbsp extra virgin olive oil
1/2 tsp garlic powder
Good pinch salt & pepper
1 small lemon or lime squeezed
1 tsp nutritional yeast (optional)

I’ve been creating videos for @wasacrispbread and I loved this so much I wanted to share it 🔥 (paid work to create videos for their page)

For this recipe you will need:
Scrambled tofu tomato

6-8WASA Räg & Chia 
400g tomatoes
2 large cloves garlic
1 tsp olive oil 
Large pinch salt & pepper

390g firm tofu
2 tsp turmeric 
1/2 tsp garlic powder
1/2 tsp smoked paprika
1 tsp Dijon mustard
Pinch salt & pepper
150ml oat milk (or enough to loosen to a slightly runny texture)

Handful fresh basil, chives or parsley

Method:
Start by roughly chopping the tomatoes, add to a large pan with olive oil, salt, pepper and chopped garlic cloves, fry on a low heat

Meanwhile prepare the tofu by splitting the block roughly in half, crumble on half into a bowl, pour over 1 tsp turmeric powder

Add the other 1/2 block of tofu into a blender along with the remaining 1tsp turmeric, garlic powder, smoked paprika, Dijon mustard and the oat milk, blend until a slightly runny texture forms 

Pour the creamy mixture over the crumbled tofu then add to the pot with the tomatoes

Gently fold together then leave to bubble away for a further five minutes 

Garnish with chopped fresh basil or chives 

Using your WASA Rag & Chia, dunk into the scrambled tofu & tomatoes and enjoy

I’ve made a herby dressing (kinda like chimichurri) with:

Oregano
Salt

Layer up a fresh crunchy baguette with vegan mayo, chargrilled peppers, spinach 

Then load up the tofu & dressing 🔥🔥

Well here is it!

To the blender add:
2 Green chillies (only use one if it’s extra spicy)
2 spring onions
Thumb sized piece of fresh ginger
3 cloves garlic 
25g coriander (or parsley if you hate coriander like me)
Splash water to loosen

TOFU:
1 block of tofu, cut into cubes 
2 heaped tbsp cornflour to toss
1 spring onion, finely chopped
1 red chilli, finely chopped 
Clove garlic, minced
Handful fresh coriander / parsley
1 tbsp sesame oil
 
FRY OFF:
the green sauce for a few minutes before adding:
400 ml full fat coconut milk
1 tsp cumin powder
1 tsp turmeric 
Good pinch salt

2 portions of rice noodles (soba or ramen noodles will also work)

GARNISH:
Fresh coriander / parsley
Green chilli
1 julienne peeled carrot

This comes in at around £1.34 per portion💰💰

INGREDIENTS:
400g tomatoes with pinch salt, pepper & 1 tbsp olive oil | £1.59

1 garlic clove, minced| 10p

1 roasted red pepper, cut into strips (I use jarred but you can get the same effect by putting a bell pepper over an open flame until charred) | 28p

1 pot of hummus (store bought for extra ease) £1.20

150ml pasta water | £0

1 tbsp harissa paste OR I found harissa seasoning in the supermarket, so I used 1 heaped tsp | 25p 

4 portions of pasta (literally any shape) | £1.20

15g fresh parsley, finely chopped | 55p

Get a pot of boiling water on the hob, add a large pinch salt along with that pasta (leave to boil for around 10 minutes)

Meanwhile roughly chop the garlic, add to a pan with the tomatoes (don’t bother chopping them) the roasted red pepper and fry for around 6-7 minutes

Add the harissa paste or seasoning along with that pasta water & hummus and mix together, smushing those tomatoes to release all the juices

Drain the pasta (don’t worry if there’s more of that pasta water left over) and mix together

Top with more salt, pepper and that freshly chopped parsley 🔥🔥🌱

AD| For this DELICIOUS and Vegan Friendly recipe you will need:
1 pack of @cauldronfoods Quick & Tasty Tofu
2 tbsp cornflour

Marinade:
2 tbsp gochujang paste
1 tbsp maple syrup
1 tbsp sesame oil
1 clove garlic, minced

For the slaw:
1 large carrot, grated
1/2 lime or lemon squeezed
1 small chilli, finely chopped
1 tsp grated fresh ginger
handful fresh parsley, chopped

150g long grain rice

OR serve in a crunchy fresh baguette with vegan mayonnaise and sriracha 

Method:

Start by draining the Quick & Tasty tofu, slice into strips then toss in the cornflour

Heat a grill pan with a drizzle of sesame oil before adding the coated tofu, then allow to fry for around 5 minutes, turn then for another 2-3 minutes

If you're serving this with rice, pop the rice onto boil (around 150ml water) 

Prepare the slaw by grating or julienne peeling the carrot, finely chop the chilli and parsley, grate in the ginger and squeeze the lemon juice in, toss together

For the last 4 minutes of cooking, add the marinade to the crispy tofu and allow to sizzle away in those delicious flavours

Serve up with a drizzle of sriracha to finish OR slice open a fresh baguette, fill with spinach, vegan mayonnaise and sriracha then layer up the tofu and slaw

Tips
If you want to leave the tofu to marinade, simply slice into strips then place into a container along with the marinade, give a good shake to cover and pop in the fridge for a few hours / overnight. Don't worry about using the cornflour when cooking, just whack that grill pan on a high heat and sizzle away

You can also grill this on the BBQ if you have a grill plate, it will be delicious and add a smokey flavour
