This bowl of leftovers was taken after shooting for @tildarice last year & thought it too good not to share on here.

For this recipe you will need:
2 x 400g tin chickpeas
2 x 400g tinned tomatoes
3 garlic cloves minced
1 medium heat red chilli
1 thumb sized piece of ginger
2 x 400ml coconut milk (optional to make it creamy as traditionally it's just tomatoes)
200ml water

Not exactly ground breaking but I’m hoping to change your view of stale old bread as cracking crouton potential. 💥

Preheat the oven to 180°C

Rip up the stale bread (the more stale the better!)
⁣

Drizzle generously in olive oil
⁣

Coat in 1/2 tsp each of

2 Slices of Deli Kitchen Sliced Focaccia – you can find it in your favourite supermarket

Cranberry sauce

Leftover stuffing

Leftover greens (get those brussels out)

Leftover vegan cheese (I used 'cheddar')

Vegan Mayo

Lettuce

PRETZEL COOKIES 🍪 ____ These festive VEGAN loo PRETZEL COOKIES 🍪

These festive VEGAN looking cookies will go down a treat over the next few weeks.
____
⁣
220g plain flour
⁣
200g vegan butter (margarine)
⁣
200g sugar (I used 1/2 golden caster and 1/2 soft brown sugar)
⁣
1/2 tsp baking powder
⁣
1/2 tsp baking soda
⁣
1 tsp vanilla extract
⁣
1/2 tsp sea salt
⁣
100g chocolate chips
⁣
10 roughly crushes pretzels

Method:
⁣

Preheat the oven to 200°C

Add the room temperature butter to a bowl along with the vanilla extract and two types of sugar and mix together using a silicone whisk or spatula until smooth
⁣
In a separate bowl mix the flour, salt, baking powder and soda together then slowly add to the bowl of butter, mixing it together as you add
⁣

One combined, add the chocolate chips and fold together
⁣

roll 5cm balls and tower one on top of another (like a snowman) on a lined baking tray - leave a few cm between each as they will expand in the oven
⁣

Press the crushed pretzels into the top of the cookie balls
⁣

Repeat until you have around 12 -14 double layer cookie balls
⁣

Bake for 5 minutes, then take them out of oven and tap them on a surface (this helps give the crackle effect) then pop them back in for a further 5 minutes
⁣
Leave to set for 10 minutes (trust me they’re worth the wait) and ENJOY!
Caramelised Bramley Apple & Pork Vegan Sausage Rol Caramelised Bramley Apple & Pork Vegan Sausage Rolls (RECIPE👇🏻👇🏻)

AD  I've teamed up with @greatbritishapples to bring you a delicious vegan friendly sausage roll making the most of British Bramley apples.

___
For this recipe you will need:
1 sheet puff pastry
1 1/2 large British Bramley apple's
1 red onion
1 tbsp olive oil
1 tsp ground fennel seeds (optional)
1 tbsp caster sugar
6 vegan sausages
1 tbsp tamari
1 tbsp poppy seeds
___
Dice the onion and Bramley apples then fry on a low heat with the olive oil, ground fennel seeds and sugar for around 20 minutes until beautifully caramelised
Preheat the oven to 200ºC
Microwave the vegan sausages for 2 minutes to soften then crumble up in a bowl then mix with the apples and onion
Roll out the sheet of puff pastry, slice in half, then add the sausage mix to each half 
Fold over the pastry then seal by prodding the edges with a fork
Brush over the tamari to get a beautiful glaze
Sprinkle on poppy seeds over the top
Bake for 20-25 minutes depending on your oven

@clearspring sent over a range of Miso so had to jump straight on it and try the white miso.😍

You will need:
1 red chilli
3cm piece of ginger
1 tbsp sesame oil
1 tbsp tamari 
3 cloves garlic
200g mixed mushrooms
120g udon noodles
800ml boiled water
1 heaped tbsp white miso paste
⁣

To top:
Grated carrot, lime & sprinkle of sesame seeds
___
METHOD:
Start by adding the sesame oil and tamari to a deep pan, place on a medium heat then add the finely chopped ginger and chilli then fry for around 3 mins
⁣
Fry the garlic off for a further 2 mins
⁣

Add the mushrooms and fry on a high heat for 6 mins
⁣
Add the water, noodles and miso paste and heat for a further 3 mins
⁣

Serve up with grated carrot and lime with a sprinkle of sesame seeds
⁣

*top tip, save some of the fried mushrooms aside to place on top at the end.

For the base:

1/4 cup almonds
⁣
1/4 cup cashews
⁣
1/4 cup cacao nibs
⁣
1 tsp chia seeds
⁣
1/4 cup dessacated coconut
⁣
6 medjool dates
⁣
1 tbsp coconut nectar / maple syrup (optional)
⁣
 ______
For the chocolate topping
⁣
100g dark chocolate
⁣
1 tsp coconut oil

Method:
⁣
Preheat the oven to 180ºC and roast the cacao nibs and nuts for 10 minutes
⁣
 
⁣
Add the roasted nuts and cacao nibs to a food processor along with the dessacated coconut and chia seeds and pulse until a sticky texture has formed *Depending on how juicy your dates are, you may need to add another 2
⁣
 
⁣
Add 1 tbsp of the nut and date base to the bottom of a lined muffin tin
⁣
 
⁣
Melt the dark chocolate with the coconut oil then pour over the top of the base, pop in the fridge to set and enjoy!

I’ve just made crispy cauliflower cauliflower so I’ve just made crispy cauliflower cauliflower so thought I’d share the recipe!

1 head of cauliflower cut into small bite size florettes
⁣
½ cup plain flower
⁣
1/2 tsp garlic powder
⁣
¼ tsp salt
⁣
1 tbsp smoked paprika
⁣
½ tsp chilli flakes
⁣
1 tsp sesame seeds
⁣
¼ cup oat milk
⁣

Simply mix the dry ingredients together then whisk in the oat milk
⁣

Chop the cauliflower florets into bite size chunks then coat in the batter
⁣

⁣
Roast at 200°C for 35 minutes
⁣

AD  I've got another recipe using @panasonickitchen 2522 Breadmaker. This time making a cinnamon roll style dough in the machine, as well as a homemade berry and orange jam. This machine has so many settings from gluten free functions to compotes and jams to cakes and traditional loaves of bread. Believe it or not, I used a pizza-making setting for the recipe and it kneaded it to perfection!

INGREDIENTS
For the dough:
320g strong white bread flour (2 1/4 cups)
½ tbsp fast yeast around ( 3g)
200ml lukewarm water (3/4 cup)
¾ tsp sea salt
50g caster sugar (1/4 cup)
2 tbsp olive oil (30ml)
___

To top:
50g flaked almonds
Zest of 1 orange
___
For the jam:
800g mixed berries (I used cranberries, blackcurrants and raspberries)
350g caster sugar
90g chia seeds
juice of 1 orange
___
METHOD
For the dough:
Place all of the ingredients into the breadbasket (placing the dried yeast in the specific pocket in the lid)
Place on setting 32 and leave to combine and knead
Once it's finished, take out of the bread maker and leave to prove for 1 hour

To make the jam:
Place all of the ingredients in the breadbasket and place the machine on setting 36 and leave

Making the star shape:
Once proven, slice into four equal balls then roll each ball out into a rough circle (less than 1cm thick)
(On a lined baking tray) layer the jam on top of the first circle, then place the second rolled out circle on top, repeat the process until you have the final circle on top
To create the specific star shape I've shared step by step in my stories (and saved in my highlights)
Allow to rest for 20 minutes then bake at 180ºC for 25-30 minutes
