Tomatoes
Red onion

To celebrate the launch, I’m making the most of their new Nocellara Olives and Harissa Houmous to bring you this flavour-packed Lentil & Olive Mediterranean Soup recipe that’s perfect for cosy autumn evenings! See the full recipe below!

Recipe:

15 Odysea Etna Nocellara Pitted Olives
1 Red onion, diced
3 Large cloves garlic, finely chopped
3 Odysea Roasted Peppers
200ml Passata
700ml Stock (boiling water and stock cube)
250g Cooked lentils (green or brown)
100ml Vegan cream (optional)

Herbs & seasoning:
1 tsp Oregano
1/2 tsp Sage and thyme
1 tsp Smoked paprika
Black pepper
Salt

For the crunchy Harissa Houmous toast:
1 Slice sourdough
Dash of vegan butter
1/2 Garlic clove
2 tbsp Odysea Harissa Houmous
Freshly chopped basil to garnish, optional

Start by dicing the onion, get them frying on a low heat in a large pot / pan, meanwhile finely chop the garlic then add to the pan

Add in the Odysea roasted peppers (roughly chopped) along with the seasoning, cooked lentils and the Etna Nocellara olives, fry for a few minutes

Pour in the passata, veggie stock, season generously with salt and pepper and bring to a low simmer for around 5 minutes

Prepare the sourdough slices by toasting, rub a garlic clove over the surface, then open the Odysea Harissa Houmous and spread generously on top

Option to add the vegan cream and stir through, or simply enjoy by dipping in the sourdough humous toast to the soup

Just a reminder that my 10 minute Hummus Pasta exi

Just a reminder that my 10 minute Hummus Pasta exists.🔥👇🏻

INGREDIENTS:
400g tomatoes with pinch salt, pepper & 1 tbsp olive oil

1 garlic clove, minced

1 roasted red pepper, cut into strips (I use jarred but you can get the same effect by putting a bell pepper over an open flame until charred)

1 pot of hummus (store bought for extra ease)

150ml pasta water

1 tbsp harissa paste OR I found harissa seasoning in the supermarket, so I used 1 heaped tsp

4 portions of pasta (literally any shape) |

15g fresh parsley, finely chopped

Get a pot of boiling water on the hob, add a large pinch salt along with that pasta (leave to boil for around 10 minutes)

Meanwhile roughly chop the garlic, add to a pan with the tomatoes (don’t bother chopping them) the roasted red pepper and fry for around 6-7 minutes

Add the harissa paste or seasoning along with that pasta water & hummus and mix together, smushing those tomatoes to release all the juices

Drain the pasta (don’t worry if there’s more of that pasta water left over) and mix together

Top with more salt, pepper and that freshly chopped parsley 🔥🔥🌱

AD | One Pot Tomato & Garlic with Mediterranean Grains 💥

I’ve teamed up with @merchantgourmet to bring you this simple lunch recipe. This is PERFECT for meal prep, packed with plants and ready in just 15 minutes!

You’ll need:

1 pouch of @merchantgourmet Mediterranean-Style Grains

300g tomatoes

3 cloves garlic

1 red chilli

1 onion

1 red pepper

1 tbsp chopped parsley

salt & pepper to season

Optional topping:
1 tbsp vegan mayo mixed with 1/2 tsp smoked paprika and dried oregano, 1 tsp water

Method:📝

Start by dicing the onion, add to a large pot with a glug of olive oil, meanwhile finely chop the chilli and garlic then add to the pot

Roughly chop the pepper and tomatoes then add to the pot once, add a splash of water (around 50ml) and allow to simmer for 5-6 minutes before adding in the Merchant Gourmet Mediterranean- Style Grains in, stir together

Season with salt and pepper, then serve up with parsley. Option to add the herby vegan mayo dressing.
