Super Greens on Rye Toast


  • 2 Slices of Rye Bread Toasted
  • 1/2 Avocado 
  • Squeeze of Lemon Juice
  • Sprinkle of Chilli Flakes
  • 1/4 Cup of Garden Peas
  • 1/2 Stalk of Celery Finely Chopped
  • 1/2 Small Red Onion Finely Chopped
  • Crumble of Feta Cheese (Approx. 2 tbsp)
  • Handful of Fresh Rocket
  • Salt and Pepper to Taste


  • Mash up half the avocado in a small bowl and add the chilli flakes, salt, pepper & lemon juice and stir together
  • Finely chop the red onion and lightly fry in a drizzle of olive oil and cook for around 5 minutes
  • Toast the two small slices of rye bread
  • Whilst the rye is toasting, finely chop the celery and crumble the feta
  • Spread a thick layer of the avocado mix onto the rye toast, sprinkle the red onion, fresh peas, celery and feta
  • Sprinkle a little more crushed black pepper and enjoy!
