Roasted Carrot Hummus & Courgette Hummus

Leftover veg in the bottom of your fridge? Don't throw is away (even if they're looking a little off) as I have a perfect dip to use up old carrots and courgettes. 

Simply roasting them and blending with garlic, tahini and spices make the most delicious dips to enjoy throughout the week.

Carrot & turmeric hummus  

In a food processor, blend together: 

2 leftover carrots roasted (180ÂșC for 20 minutes)
1 tbsp turmeric 
1 large clove garlic
1/4 cup olive oil
2 tbsp tahini 
generous pinch of salt 

Courgette hummus: 

1 leftover courgette roasted (180ÂșC for 20 minutes)
1 tbsp cumin
1 large clove garlic
1/4 cup olive oil
2 tbsp tahini 
generous pinch of salt
