Maple Roasted Carrots

Ingredients

200g seasonal carrots, I chose these slightly smaller ones for the plate

3 tbsp maple syrup

1/2 tsp salt

1 tsp olive oil

1/4 tsp pepper

 

For the dressing

2 tbsp plant based yogurt

1/2 lemon squeezed

1/2 tsp garlic powder

pinch salt

 

To garnish

1 tbsp fresh pomegranate seeds

1 tbsp crushed pistachio nuts

 

Method

Preheat the oven to 180ºC

Using a deep dish, add the carrots and maple syrup with the olive oil and toss until all coated, then sprinkle with a generous pinch of salt and pepper

Roast in the oven for 40 minute, turning after around 30 mins just to make sure each side is beautifully coated

Make the dressing by simple mixing all of the ingredients together then drizzling over the top of the roasted carrots

Top with the fresh pomegranate seeds and pistachio nuts
