Fava Dip


1 cup yellow split lentils

3 cups water

3 cloves garlic

1 small red onion (half for the dip and half for the dressing)

Large pinch salt & pepper

3 tbsp olive oil

1tsp ground coriander


Pop the split peas in a bowl of water and let sit for 30 minutes

Sieve off and then add to a pot with 3 cups of water and bring to a simmer

After around 30 minutes give the split peas a check, if they’re not mushy, give them another 10-15 minutes

Once the split peas are cooked, add the olive oil, peeled garlic cloves and ½ of the chopped red onion and allow to simmer / fry for around 6-7 minutes

Pop the mix into a food processor and blitz for 30 seconds or so until you've got your desired texture

Top with finely chopped red onion, black olives and a drizzle of olive oil
