One Pot Creamy Tomato & Pepper Pasta

I love a one pot pasta meal as you can simply chop the veg, pop the lid on and walk away. The base of the pasta dish is made from cashew nuts so gives a really thick and creamy texture. This can be made in advance and popped in a container for those mid week meals where you simply pop all the ingredients together!

Ingredients:

3 cups conchiglie pasta (pre boiled)

1 tin chopped tomatoes

1/3 cup soaked cashew nuts

1 red onion 

3 cloves garlic

1 red pepper

1 orange pepper

1 tsp nutritional yeast 

Sugar snap peas 

1/2 cup water

Spices

1/2 tsp smoked paprika

2 tsp mixed herbs 

Pinch salt & pepper

Method:

Simply chop the onion, peppers and mince the garlic then add all the ingredients to one pot and leave to simmer for around 15-20 minutes until all cooked

Taste test and add any additional seasoning needed

Enjoy with an extra sprinkle of mixed herbs and tuck in!
