Festive Christmas Wreath – Vegan

Ingredients:

-1 small roasted squash

-1 large red onion

-1/2 cup roasted chestnuts

-1 cup shredded brussels sprouts

-1/2 tsp @schwartz.uk garlic powder

-1/2 tsp @schwartz.uk thyme

-1/2 tsp @schwartz.uk rosemary

-1/2 tsp @schwartz.uk smoked paprika

-1 block ready made puff pastry

-1/2 tsp salt

-1/2 tsp marmite + 3 tbsp water

Method

-Roast the squash at 180ºC for 30 minutes

-Thinly slice the red onion into strips, then fry with 1 tsp olive oil, a pinch of salt and a pinch of sugar (optional)

-After 6-7 minutes, add the shredded brussels spouts and chopped chestnuts, fry for a further 4-5 minutes

-Season with the @schwartz.uk garlic, rosemary, thyme and smoked paprika then set aside

-Mix the roasted squash with the red onion filling and mash

-Roll out the puff pastry then cut out the wreath, add the butternut mix, then using the leftover pastry cut out four triangles then overlay

-Using a cookie cutter, or free hand a festive shape then add to the inside of the wreath

-Brush over the marmite and water mix and bake for around 25-30 minutes at 200ºC

-Take out and enjoy!
