Chocolate & White Bean Brownies

1 tin cannellini beans /400g, drained and rinsed

2 large overripe bananas (cut a few slices to add on top of the brownies)

1  cup caster sugar / 125g

5 medjool dates

1/4 cup cocoa powder / 25g

3/4 tsp sea salt

2 tsp baking powder

1 cup mix walnuts & pecans / 125g (save a few on top of the brownies)

1/2 cup chocolate chips / 50-100g (save a handful to add on top of the brownies)




Preheat the oven to 160ºC and line a brownie tin with baking parchment (or use silicone for zero waste)

Pop all of the ingredients, apart from the nuts and chocolate chips, into the food processor and blitz

Once the ingredients have come together, roughly chop the nuts and add along with the chocolate chips and blitz for 20 seconds

Spoon the mix into the brownie tin and top with the sliced bananas, nuts and chocolate chips, then pop into the oven for around 22-25 minutes

*note it wants to have a little wobble when you take it out but it shouldn't be runny, if so add another 3-4 minutes onto cooking time

Leave for 20 minutes to set, slice and enjoy!
