Authentic Pasta al Pomodoro

vegan pasta al pomodoro


1/4 cup olive oil 
1 carrot finely chopped
1 red onion finely chopped
1 stalk celery finely chopped
1 tin plum tomatoes
3 cloves garlic minced
1/2 tsp dried basil
1/2 tsp dried sage
sprig fresh thyme
large pinch salt & pepper
4 servings of spaghetti


1. Finely chop all of the veg (apart from the tomatoes) then gently fry with the olive oil for around 10 minutes
2 .Once broken down, add the minced garlic and continue to fry for a further 1 minute
3. Add the plum tomatoes & dried herbs, salt and pepper
4. In a separate pot bring the spaghetti to a simmer for 8 minutes
5. Once cooked, stir in with the sauce and garnish with fresh basil and (vg) parmesan 
6. Enjoy
