Pesto Pasta With Peas, Tomatoes & Avocado


  • 1 Cup of Wholewheat Pasta
  • 2 tbsp Pesto (Homemade or Shop Bought)
  • 4 Cherry Tomatoes
  • 1/4 Cup of Peas
  • Fresh Basil Leaves
  • 1/2 Avocado 
  • Olive Oil

For the Pesto 

  • 2 Cups of Fresh Basil
  • 1/2 Cup Extra Virgin Olive Oil
  • 1/3 Cup Pine Nuts
  • 3 Minced Garlic Cloves
  • Salt & Ground Black Pepper To Taste


For the Pesto

  • Simply pop all the ingredients in a food processor and blend until soft and creamy

Pasta Pesto

  • Bring a small pan of water to boil and cook the pasta for around 20 minutes 
  • In a separate pan, drizzle a little olive oil and allow the tomatoes, peas and pesto sauce to cook slowly on a low heat
  • Whilst the pasta is cooking, half a small avocado and carefully peel off the skin. Using a julienne peeler peel of thin strips to twirl
  • Once the pasta is cooked, simply mix all together in a town, adding the avocado twirls on top. Drizzle a dash of olive oil, himalayan salt & pepper and a few fresh basil leaves
