Flapjack Oat Breakfast Pizza

I first saw these breakfast 'pizzas' on my friend Bo's Kitchen. I was mesmerised by the idea of flapjack for breakfast, cut into pizza slices - perfect for sharing.

 

Ingredients

1 cup oats

¼ cup coconut sugar

¼ cup desiccated coconut

Tsp vanilla paste

¼ cup coconut oil

¼ cup coconut nectar

1 tbsp chia seeds + 3 tbsp water

Pinch of salt

Method

Preheat the oven to 180˚C

 

In a large mixing bowl, add the dry ingredients and mix together

In a smaller bowl add the wet ingredients and mix

Pour the wet ingredients into the dry and combine

Add the oat mix to a greased baking tray in a flat circle (approx 1cm thick)

Bake in the oven for 15 minutes, then take out and slice into pizza cuts then pop back in the oven for 5-10 minutes until golden

Take out the oven and allow to cool for 5-10 minutes to harden and cool completely 

 

For the Topping

I used 1/2 cup dairy free yogurt

Mix 2 tbsp chia jam (recipe here)

1 tbsp fudge bites (you can add anything you like, sprinkles, chocolate chips etc..)
