Courgette & Corn Fritters


  • 2 Courgettes
  • Basil, Sage, Chilli Flakes, Garlic powder, Oregano
  • 2 tbsp Olive Oil
  • 2 tbsp Tahini
  • 1/3 cup Sweetcorn


  • Grate the courgettes and place on a tea towel or muslin cloth
  • Squeeze the water out of the courgettes to allow them to fry easily
  • Place the grated courgette in a bowl with the other ingredients and mix together
  • Place a pan on medium heat with a drizzle of olive oil
  • Shape the mix into small round patties around 2cm thick then fry them in the pan
  • Allow each side to fry for around 3-5 minutes
  • Serve these up in a stack, in a salad or in a burger for a tasty meal!
