Classic Avocado & Eggs with Fresh Crusty Roll


  • 1 Large Organic Egg
  • Freshly Baked Roll (I used Paul Hollywood's Part Baked Rolls)
  • 1/2 Ripe Avocado 
  • 1/4 tsp Chilli Flakes
  • Sprinkle of Poppy Seeds
  • Sprinkle of Sesame Seeds
  • Pinch of Salt & Pepper


  • Preheat your oven for the part baked roll at 200˚C 
  • Place the bread in the oven for 8 minutes
  • Once the bread has cooked, allow to cool
  • Bring a small pot of water to simmer
  • Swirl the water in the pan to create a vortex and crack the egg in the middle and cook for approx. 3 minutes
  • Smash half the avocado onto half of the fresh warm bread and sprinkle the chilli flakes, pepper, and seeds on top
  • Carefully place the poached egg on top of the avocado, sprinkle a little black pepper over the top and enjoy!
