Ingredients
For the Oat Crumble
- 3 Cups of Oats
- 2 tbsp Coconut Oil
- 1/3 Cup Maple Syrup
- 1/4 tsp Powdered Ginger
- 1/2 tsp Cinnamon
- 3 tbsp Ground Almonds
For the Fruit Filling
- 200g of Fruit
- 1 tsp Maple Syrup
- 1/2 tsp Cinnamon
- 2tbsp Chia Seeds
Method
- Preheat the oven to 180˚
For the Oaty Base
- In a small pan gently melt the coconut oil ready to add to the mix
- In a medium size bowl add the oats, maple syrup, ginger, cinnamon and melted coconut oil then mix together until all combined
- Lightly grease an oven proof dish (about the size you would use to make brownies) and cover the base with half the oat mixture
- Leave the other half in the bowl ready place on top of the berry mix
For the Berry Mix
- In the pan that was used for the coconut oil, add the berries and maple syrup and allow to break down and become juicy
- Add the cinnamon and chia seeds, give it all a good stir and allow to simmer until all heated through
- Pour the berry mix over the thin layer of the oaty base
- Then add the last part of the oaty crumble on top of the berry mix and top with the ground almonds
- Bake for 25-30 minutes until the top turns golden (I usually drizzle a little more maple syrup on top after 15 minutes of baking to allow a crunchy oat top)
- Take out the oven, and serve whilst warm with Nice cream or a plant based cream such as Alpro
