Spicy Scrambled Chickpeas

Ingredients

  • ½ Finely Chopped Red Onion
  • ½ Tin Chickpeas (around 100g)
  • 1 Finely Chopped Red Chilli
  • 1 Large Clove of Garlic Minced
  • ⅛ tsp: Turmeric, Dried Basil, Smoked Paprika, chilli flakes
  • Large Glug of Olive Oil
  • Salt & Pepper to taste
  • Fresh Spinach & Natural Yogurt (Dairy Free Brand if Vegan)

Method

  • Finely chop the chilli and onion then gently fry in a pan with a little olive oil
  • Add the garlic to cook for a further 1 minute then add the dried spices
  • Add the chickpeas to the pan with an extra glug of olive oil and cook for a further 5-6 minutes
  • Using a fork mash around ½ of the chickpeas in the pan and allow to cook for a further 5 minutes
  • Give the mix a taste and add more spices until seasoned to perfection (I always add more smoked paprika)
  • Serve with some fresh baby spinach, and top with a dollop of yogurt - Vegans use a dairy free brand
