Roast Sweet Potato Stuffed With Peppered Houmous, Red Onions, Peas and Asparagus


  • 1 Sweet Potato For Roasting
  • 3 Stalks of Asparagus
  • 1/2 Small Red Onion Cut Into Strips
  • 1/4 Cup of Garden Peas
  • 3 Heaped tbsp of Houmous
  • Handful of Crushed Pistachio Nuts
  • Pinch of Himalayan Salt
  • 1/4 tsp of Crushed Black Pepper
  • Drizzle of Olive Oil


  • Preheat the oven to 200˚C
  • Wash the sweet potato and pierce with a fork all over
  • Place potato in the microwave for approx. 5 minutes to quicken to cooking time
  • Drizzle the potato in a small amount of olive oil and salt and place in the oven for 30 minutes
  • Whilst the potato is cooking, chop the onion and add to a small pan on a low heat with a drizzle of olive oil for 10 minutes
  • Five minutes before the potato is cooked, cut the asparagus into strips and steam with the garden peas
  • Cut open the sweet potato, add the houmous and other ingredients
  • Crush a handful of pistachio nuts and sprinkle over the top
  • Add some crushed black pepper to taste and enjoy!
