Raw Oat & Date Cake

Ingredients

  • 15 Dates (I used dried dates that I had soaked in hot water for 30 mins)
  • 1 Heaped Cup Organic Oats
  • 2 tbsp Chia Seeds
  • 2 tbsp Maple Syrup
  • 2 tbsp Cacao Nibs (or chunks of dark chocolate)
  • 1 tsp Vanilla Essence
  • 2 tbsp Sesame Seeds
  • 2 tbsp Coconut Flakes
  • ¼ cup Chopped Cashew Nuts
  • ½ Cup Chopped Pistachios
  • 40g 80% Dairy Free Chocolate (or find my vegan chocolate recipe here)
  • 1 tbsp Bees Pollen to Decorate

Method

  • Soak the dates in hot water for around 30 minutes then blend in a food processor with a dash of water until broken down (if you are using medjool dates, you won’t need to soak)
  • Add all the other ingredients to the food processor leaving out the cacao nibs, chocolate, and make sure you leave ½ the chopped pistachios for the topping!
  • Once combined and sticky, take out of the processor and fold in the cacao nibs
  • Line a shallow cake tin, skillet or brownie tin with baking paper and add the flapjack mix
  • Sprinkle the other ½ of the pistachios over the top of the flapjack and any additional cacao nibs / coconut flakes
  • Using a bain marie melt the dark chocolate then drizzle over the top of the flapjack mix and leave to set in the fridge
  • Decorate with bees pollen, edible flowers and grated chocolate and share with friends!
