Potato & Lentil Dal

Easy Vegan Dal Recipe

This potato and lentil dal recipe is a great mid week meal and is so easy to make. You only need a few main ingredients, the key is the delicious spices of tumeric and cumin!

Ingredients

  • 500g of Baby Potatoes + water to boil
  • 1 tbsp of Coconut Oil
  • 1/2 cup of dried red lentils
  • 1l vegetable stock
  • 2 chopped chillies
  • 3 cloves garlic

Spices:

  • 1 tbsp turmeric
  • 1 tbsp cumin
  • 1/4 tsp chilli flakes
  • 2 bay leaves
  • Generous Pinch Salt & Pepper

Method

  • Roughly quarter the baby potatoes and gently boil for around 15 minutes until softened
  • In a separate pan gently fry the dried spices, chopped fresh chilli and bay leaves for 2 minutes in a tbsp of coconut oil
  • Add the minced garlic cloves to the pan and fry gently for 60 seconds
  • Add the lentil and 1 litre of vegetable stock and cook whilst the potatoes are boiling
  • Once the potatoes have cooked add them to the lentils and simmer for a further 10 - 15 minutes
  • Taste test, adding a little more water if the lentil need it & add salt and pepper to taste
