Hazelnut & Cacao Granola

Ingredients

  • 3 Cups of Oats (I use Cornflake Gluten Free)
  • 3 tbsp Melted Coconut Oil
  • 1 Cup of Roughly Chopped Hazelnuts 
  • 2 tbsp Linseed
  • 3 tbsp Chia Seeds
  • 1 tsp Cinnamon
  • 1/4 Cup Cacao Powder
  • 1/4 Cup Maple Syrup

Method

  • Preheat the oven to 150˚
  • Using a small pan, gently melt the coconut oil ready to add to the mix
  • Whilst the coconut oil is melting, combine the dry ingredients to a large bowl and stir
  • Add the coconut oil and maple syrup to the dry mixture to add the sweetness and combine the wet & dry
  • Lightly grease two trays with coconut oil and evenly spread out the granola mix 
  • I usually drizzle a little more maple syrup over the top to help caramelise the top layer
  • Add both trays to the oven and bake for 15 minutes
  • After that first 15 minutes, give the mix a stir to ensure an even bake, then bake for a further 15 minutes, stirring the mix every 5 minutes in between to make it all gets nice & crispy
  • Once evenly baked, take out the oven and allow to cool fully before placing in a sterilised jar
  • Once it's finished pour over your porridge or overnight oats for a bit of crunch or simply use to snack on throughout the day!
