Grilled Halloumi, Avocado & Poached Egg Wholemeal Sandwich

Ingredients

  • 1 Wholemeal Roll
  • 1 Medium Free Range Egg
  • 1/2 Ripe Avocado 
  • 3  Slices of Halloumi Cheese
  • Small Pinch of Fresh Cress
  • Himalayan Salt & Pepper 

Method

  • In a griddle pan, on a medium heat lightly fry the halloumi for 3-4 minutes
  • In a pan of simmering water, create a vortex by swilling a spoon around, then drop the egg in the center then poach for 3-4 minutes depending on how runny you like your yolk
  • Whilst the egg is poaching, half the wholemeal roll and toast
  • Mash half the avocado onto the bottom slice, grilled halloumi, then layer the poached egg, and sprinkle some fresh cress and assemble the top slice
  • Pinch the egg to allow the yolk to drizzle out,
  • Sprinkle a little salt and pepper to taste
  • Enjoy!
