Dairy-Free Crepes

I've made plenty of pancakes  in the past few years so thought it was time to try a crepe!

Nothing compares to a Nutella filled crepe in Paris, however I have come up for an equally delicious alternative. These are low in sugar so you can enjoy something sweet drizzled on top. 

Ingredients

  • 3 Eggs
  • 1 Cup Flour (I used Rice Flour. Chickpea, Whole-wheat or Buckwheat will work well!)
  • 1 Cup Cashew Nut Milk (any dairy-Free milk will work!
  • 3/4 Cup Water
  • 1 tsp Vanilla Paste
  • 1 tsp Maple Syrup
  • 1/4 tsp Salt
  • 1 tbsp Melted Coconut Oil

Method

  • Combine the dry ingredients together in a mixing bowl
  • Whisk the eggs in a separate small bowl. Add the coconut oil and the vanilla paste then combine with the dry ingredients
  • Mix together and leave in the fridge for around 20 minutes
  • Stick a 20cm pan on medium - high heat with a tiny drop of coconut oil, allow the pan to get nice and hot then pour a small ladle of pancake mix - just enough to create a thin covering in your pan
  • Once the crepes start to bubble and lift, give it a shake and flip!
  • See how high you can flip your pancake then allow the other side to cook, then drizzle over your favourite toppings!
  • Roll ‘em, drizzle ‘em, fold ‘em, spread ‘em …. However you prefer simply enjoy ‘em!
