Dairy Free Blinis – Savoury

These Blinis are a great idea for brunching with friends or serving at a party! You can mix them up with sweet an savoury, here are some of my toppings with inspiration from Greek flavours, Mexican & Mediterranean.

Ingredients

  • 1 Cup Rice Flour (Can also use buckwheat or plain)
  • 1 Cup Cashew Nut Milk (other nut milks will work)
  • 1 Large Egg
  • Pinch of Salt
  • 1 tbsp Coconut Oil
  • 1 Heaped tsp Baking Powder

Method

  • Mix the dry ingredients together in a bowl
  • In a small bowl whisk the egg then add to the dry ingredients and combine
  • Cover and leave in the fridge for 15 minutes
  • Place a non-stick pan on medium-high heat with a drop of coconut oil
  • Ladle 4 small dollops of mixture into the hot pan and cook on each side until they start to make little bubbles (around 1 minute)
  • Flip and cook for a further 1 minute, then repeat until all the batter is used up!
  • Serve as sweet or savoury - I have topped mine with a mixture of; tzatziki, cucumber and olives, humous, radish and poppy seeds, and guacamole tomatoes and lettuce.
