Buddha Bowl

There are someย quite a few nights where I come home and the idea of standing over pots and pans for an hour seems like a chore. On these nights I cheat and throw veg in a bowl and make it look pretty, then call it something fantastic - a Buddha Bowl!

There are plenty of delicious buddha bowls on Instagram filled with falafels, patties, roasted veg & salad, all full of colour and flavour. Here is one of my favourite variations....

Ingredients:

  • 1 cup of cooked short grain rice
  • 1/2 Avocado
  • 3 Cherry Tomatoes
  • 1/2 Courgetter
  • 1/2 Yellow pepper
  • 1/2 Red Chilli finely chopped
  • 1 Clove of garlic
  • 1 Shallot
  • Dairy Free Yogurt (or a thick greek yogurt if you eat dairy)
  • Handful of chopped chives
  • Leafy Greens
  • Optional
  • Sweet chilli sauce

Method

  • Gently fry off the minced garlic and shallot in a pan and add the chopped tomatoes, peppers and courgette and leave to soften
  • In a separate pan gently fry off the chopped chilli, then add the cooked short grain rice (For an extra kick of flavour add a dollop of sweet chilli sauce, it adds sweetness)
  • When the vegetables have cooked assemble your buddha bowl
  • Finish with 1/2 a sliced avocado and a dollop of yogurt with the chopped chives.
  • Sprinkle salt and pepper to taste and enjoy!
