Blueberry & Oat Granola Cookies

Ingredients

  • 1/2 Cup of Oats (I used gluten free jumbo oats)
  • 1 Cup of Blueberries
  • 1/4 Cup Coconut Oil
  • 3 tbsp Peanut Butter (use a one without palm oil)
  • 1 tbsp Chia Seeds
  • 2 tbsp Maple Syrup
  • 1 tsp Cinnamon 
  • Pinch of Salt 

Method

  • Preheat the oven to 180˚C and lightly grease 2 trays with coconut oil
  • In a small pan gently melt 1/4 cup of coconut oil 
  • Once the coconut oil has melted add to a large bowl then add the maple syrup, peanut butter and cinnamon and give a good stir
  • Add the oats into the wet mix and add a pinch of salt, the fold together until all the oats are covered
  • Just before you make the cookies add the fresh blueberries and try not to squish them when moulding the cookies
  • If the batter isn't sticky enough to hold simply add another 2 tbsp of peanut butter
  • I roughly made 9 cookies by going for an 'authentic' look (I couldn't be bothered to neatly cut out the same size to perfection) and place on the tray to bake for 8 minutes!
  • Allow to cool for a few minutes (I can never wait and always burn my tongue on hot cookies.... but it's so worth it)
