Banana Pancakes with Homemade Chia Jam & Fresh Berries

Ingredients

  • 1 Ripe Banana
  • 2 Organic Eggs
  • 1/4 Cup of Oats
  • Pinch of Salt
  • 1/2 tsp of Cinnamon
  • Coconut Oil (For Frying)
  • 1 tbsp Chia Jam (View Recipe Here)
  • Handful of Fresh Berries
  • Greek Yogurt (Optional)

Method

  • Warm up pan or skillet on medium heat adding coconut oil
  • Mash up ripe banana in a bowl 
  • Add the eggs and then whisk together
  • Add the oats, cinnamon and salt
  • Using a ladle, add pancake mix to heated pan into equal amounts
  • Fry each pancake for approx. 3 minutes until golden, then flip!
  • Pile pancakes on a plate, add Chia Jam, Fresh Berries & Yogurt
  • Enjoy!
