Banana & Oat Pancakes With Blueberry Compote

Ingredients

For The Pancakes

  • 1 Ripe Banana
  • 1 Cup of Almond Milk
  • 2 tsp Baking Powder
  • 1 tsp Vanilla Paste
  • 1 Cup Oats (Whizzed in the blender to make oat flour)
  • 1 tsp Coconut Oil (to heat in the pan)
  • 1 tsp Cinnamon
  • Pinch of Nutmeg
  • Pinch of Salt

 

For the Blueberry Compote

  • 1/2 Cup Fresh Blueberries
  • 1 tsp Coconut Oil 

Method

  • Heat the tsp of coconut oil in a large pan on a medium - high heat
  • Whilst the pan is heating mash the ripe banana in a bowl with the back of a fork
  • Pulse the oats in a blender to form an oat flour and add to the banana and egg bowl, with the cinnamon and nutmeg
  • Add the ground oats, cinnamon and baking powder to the mashed banana and mix together
  • Leave in the fridge for around 5/10 minutes as it helps keep the batter thick and firm when added to the pan
  • Heat a large pan on a medium to high heat, with a tsp of coconut oil, then pour small circles of pancake batter to make your pancakes
  • Give the mix a stir, if the consistency is still fairly runny just add a little more oat flour
  • Place 3-4 even dollops onto the pan and fry till bubbled start appearing on the surface, then flip them over
  • Whilst the pancakes are cooking place the blueberries in a pan with a tiny pinch of coconut oil and lightly cook on a low heat until they break down and become juicy
  • Whilst my second batch of pancakes is cooking I keep the first lot heated in an oven at a really low heat 
  • Plate up the pancakes, and add the blueberry compote. I usually drizzle coconut yogurt over the top with a pinch of chia seeds
  • Enjoy!
